   How did they make ice, in the days before electricity?   
      
   And, did the inventors manage it empirically, without   
   education in thermodynamic theory?  I admit,   
   without book learning, the compression/condensation/   
   evaporation cycle would never occur to me, it’s    
   far from intuitive.
