Try this instead;

echo -e "A M\xf8\xf8se once bit my sister ..." | iconv -f latin1 -t utf8

I built the same version of busybox on the Europoint and noted that it also
isn't uft8 friendly so I don't get to blame stinkin' windows.  :::sigh:::
